The Diffusion of Maize to the Southwestern United States and its Impact

There have been discoveries of how maize was brought to southwestern United States. Farmers from the speech community of Proto-Uto-Aztecan (PUA) migrated from Mesoamerica to the southern region of the United States and brought maize integrating it into their agriculture. Uto-Aztecans (UA) language community is a subgroup of PUA and it is believed UA played an important role in the diffusion of maize. History of Mexican Food

History on Mexican Food     Mexican food has made an impactful contribution to Las Americas. Mexican food originated from three main cultures Mayan, Aztec, and Spain. The Mayans most traditional food came from corn and revolutionized it. The Aztecs added salt, peppers, and chocolate as spice ingredients. When Spain invaded Mexico, they brought dairy products, garlic, and many other herbs and spices. In Mexican dishes corn is the main ingredient in making tortillas, sopes, tacos, enchiladas, pozole, tamales, corn chips, esquite, chilaquiles etc.  Sources:  Traditional Mexican Food—A Treat for All the Senses (familysearch.org)

Corn is Familia

My research topic is about authentic Mexican cuisine. I chose this topic because Mexico is rich in flavorful and colorful food. Food does not discriminate and through flavors it tells a story of the "maiz" (corn) and culture from our ancestors. Through the language of food, we break stereotypical barriers, and everyone comes together to enjoy a delicious meal.
